Garlic & Rosemary Grilled Lamb Chops – Juicy, Flavourful & So Easy!

If you’ve never grilled lamb chops before, you’re in for a treat. There’s something magical about the way garlic and rosemary work together, infusing the meat with deep, aromatic flavours. The slightly charred crust, the juicy center—every bite is pure bliss. Whether you’re firing up the grill for a family dinner or impressing guests, this dish is a winner.  

What You’ll Need: 

  • 4-6 lamb chops 

  • 2 cloves garlic, minced 

  • 2 sprigs rosemary, chopped 

  • 1 tbsp olive oil 

  • 1 tbsp lemon juice 

  • Salt and pepper to taste 

Let’s Cook: 

Marinate the Lamb – In a bowl, mix together the minced garlic, chopped rosemary, olive oil, lemon juice, salt, and pepper. The smell alone will make you hungry! Coat the lamb chops evenly, making sure every inch is covered with flavour. Let them marinate for at least 30 minutes—if you have time, leave them for a few hours or even overnight. The longer, the better! 

Preheat the Grill – Set your grill to medium-high heat. If you don’t have a grill, no worries! A cast-iron pan or grill pan works beautifully. 

Grill to Perfection – Place the lamb chops on the grill and cook for about 4-5 minutes per side, depending on thickness and how well-done you like them. For a perfect medium-rare, aim for an internal temperature of around 57°C (135°F). The goal is to get a beautiful crust while keeping the inside tender and juicy. 

Rest & Serve – This part is important! Let the lamb chops rest for at least 5 minutes before digging in. This allows the juices to redistribute, keeping the meat incredibly tender. Serve with grilled veggies, a fresh salad, or some roasted potatoes, and enjoy a meal that tastes like it came straight from a high-end restaurant.
